Tamarind seed oil is the seed oil of tamarind. Tamarind seed is an underutilized by-product of the tamarind pulp industry. Only a small part of the seed, in the form of tamarind almond powder (TKP), is used as sizing material in the textile, paper and jute industries. Although many applications of this seed are possible, there have hardly been other uses for it, including its use as an additive in food formulations. The excellent gelling adhesive characteristics of the decorticated seed powder can lead to various applications in the food and pharmaceutical industries which are apparent from the number of research papers as well as from patent applications. Therefore, this article focuses on the possibilities of using seed in various food and non-food industries, with special reference to physical and engineering properties, hydration behavior, rheological properties, functional and nutritional characteristics And processing of tamarind seeds for broader applications.
